I love corn in a cup, and this is a pasta version of that which is perfect for any upcoming bbq or cookouts! I personally love this salad warm, but you could also serve it cold. It just depends on your preference!

✨ 1lb of pasta
✨2 T chicken boullion to salt pasta water
✨1lb bag of corn (2 cups)
✨4 oz cream cheese (room temperature)
✨4 Tablespoons of butter
✨2 teaspoons paprika
✨3 teaspoons chilli powder
✨1 cup mayo
✨3/4 cup sour cream
✨juice of 4 limes
✨1/4 cup grated Parmesan cheese
✨salt and pepper to taste
✨cilantro for garnish
✨cotija or queso fresco

1. Bring water to a boil, add chicken bouillon, cook pasta al dente.
2. In a pan, melt butter, add corn (frozen or grilled), and cream cheese, once cream cheese is fully melted turn off stove.
3. Add chili powder, paprika, garlic zest, mayo, sour cream, and Parmesan.
4. Combine cooked pasta and corn mixture, add lime juice, salt and pepper and mix well.
5. Taste for salt and Garnish with cotija cheese and cilantro. Enjoy!l

I used to love hamburger helper when I was younger, it is such a comfort meal and this is basically a grown-up elevated version of that!

Beef Stroganoff Recipe
✨1 lb of ground beef
✨1 small yellow onion
✨1 Tablespoon butter
✨6 cloves of garlic minced
✨1 block of cream cheese
✨2 cups of pasta
✨2 cups of chicken or beef broth(I used chicken bone broth)
✨1 teaspoon garlic powder
✨1 teaspoon onion powder
✨1 teaspoon Italian herbs
✨ salt and pepper to taste
✨1/4 cup cheddar
✨1/4 cup mozzarella

1. Brown meat on medium heat, seasoning with garlic powder, Italian herbs, salt, and pepper.
2. Add butter (optional for fattier ground beef), minced yellow onion, and minced garlic; sauté until onions are translucent.
3. Deglaze the pan with chicken broth.
4. Add pasta sauce and cream cheese block.
5. Bring to a boil, then add pasta.
6. Reduce heat to medium-low, cover, and cook for 15 minutes or until pasta is soft.
7. Taste for salt, then turn off heat.
8. Top with cheddar and mozzarella cheese, cover to melt.
9. Serve and enjoy!

Mojitos remind me of the spring time and here is a Mocktail version! You can swap out the orange for strawberries, and it’s also so delicious!

Brown Sugar Orange Mojito Mocktail
✨10 fresh mint leaves
✨3 Tablespoons orange juice
✨1 small lime cut into quarters
✨1 Tablespoon brown sugar (or more if you like it sweeter)
✨soda water (I used a lime flavored soda water)

Garnish
✨mint leaves
✨orange slice
✨sugar for the rim

1. Rim the glass with lime and dip it in brown sugar.
2. Add lime pieces, orange juice, mint, and sugar to the glass, then muddle.
3. Taste the syrup; if desired, add more sugar for sweetness.
4. Top with ice and soda water.
5. Garnish with a slice of orange and additional mint.
6. Enjoy!

The moment Easter weekend hits all of those cookout start and this is one of my most highly requested side dishes to bring! I promise even people that don’t care for broccoli will enjoy this!

Broccoli Salad Recipe
✨ 5 cups of chopped raw broccoli
✨ 1/2C freshly shredded Cheddar Cheese
✨ 8 strips of crispy bacon
✨ 1/2 red onion minced
✨ 1 cup of mayo
✨ 3 Tablespoons of Vinegar
✨ 4 tablespoons Sugar

1. Warm vinegar slightly and combine with sugar until fully dissolved.
2. Add mayo to the mixture to form dressing.
3. Wash broccoli well, chop it up into bite size pieces and add to the dressing.
4. Add chopped crispy bacon, cheese and minced onion.
5. Mix well, cover, and store in the fridge for at least 3 hours or overnight for better flavor.
Enjoy!

I combined two of my all-time favorite soups, French onion, and cheese steak and created this mouthwatering comforting bowl of goodness. My husband actually said this is the best soup I’ve made yet! I hope you give it a try!

-2 lbs of steak cubed
-1/4 cup flour
-1/2 Tablespoon olive oil
-2 Tablespoons butter
-6 yellow sweet onions
-4 cloves of Garlic minced
-1/2 cup apple juice
-1 teaspoon white wine vinegar
-1 teaspoon Worcestershire sauce
-1/2 teaspoon dried Thyme or 3 springs of fresh
-Salt & pepper to taste
-onion and garlic powder (optional)
-1/4 cup half and half
-4 cups of water & 2 Tablespoons of better than beef bouillon
-3 ounces unexpected cheddar cheese (or any aged sharp cheddar)
-2 ounces Gruyère cheese
-1 ounce Parmesan cheese
-extra cheese for garnish
-ciabatta bread

1.Cube steak and pat dry; season with salt, pepper, and flour.
2.Heat olive oil in a pan over medium heat.
3.Sear steak for about 2 minutes per side(it won’t be fully cooked at this point) and add additional seasonings like garlic powder and onion powder; remove from pan.
4.Reduce heat, add onions and butter; caramelize for 20 minutes on medium-low heat, adjusting heat if necessary.
5.Add minced garlic, apple juice, vinegar, Worcestershire sauce, and thyme; caramelize for another minute.
6.Return steak to the pan, add beef broth, bring to a boil, then lower back down to a simmer.
7.Stir in half-and-half, gradually add cheese until melted, setting some aside for topping.
8.Taste for salt, adjust if necessary.
9.Serve soup in oven safe bowls, top with toasted bread, and a handful of grated cheddar.
10.Put it in the air fryer for about 10 minutes at 450°F or until cheese is bubbly
12.Enjoy your delicious soup!
