⏳summer is here!

Finally ordered these (store didn’t have my size) but they’re a lot heavier than I expected! The UGG goldenglow is SO lightweight this almost felt too heavy but I think I’m spoiled and the heavier may mean more durable in this case.

Can’t wait to style them when they finally arrive. Have the potential to be an amazing shoe to pack for travel. Wear with shorts, dresses, wide leg ankle length jeans etc.

Love the Velcro feature vs. twist lock design to slip on and go easily all the time.

Strawberry Shortcake 🍰♥️🇺🇸

The easiest and most delicious dessert perfect for any summer gathering from a backyard BBQ to Memorial Day or July 4th!

It’s light, refreshing, filling and sweet 🍓

Make some mini Angel Food Cakes (you can use a donut mold if you can’t find mini ramekins) or buy premade at the grocery.
Wash and slice organic strawberries then add to a bowl. Pour in a splash of water just to make sure the slices are moist, then sprinkle in 1 TBSP sugar.

Mix well - as you stir, the strawberries will create their own syrup from the sugar.

Plate your mini angel food cake, add a little dollop of whip cream, layer on strawberries mix, then top with a tiny kiss of more whip cream.

And that’s it - super delicious and everyone will love it!

It’s good to be back!! 📲🔋🔌

Took a few days away to spend time with my amazing parents and then came home to a literal storm that knocked out power and cell service pretty severely across Houston from last Thursday to after midnight last night.

It’s been nice to have some days unplugged - but I’m grateful for the access to an outlet where I can be creative again 🙏🏼

My huge restock from @thrivemarket brought me these delish @primalkitchenfoods so I made a super simple dish; shrimp vermicelli bowls using their cilantro lime sauce for the slaw! 🍤
Full recipe listed below:

▢ 1 pound shrimp
▢ ¼ cup low sodium soy sauce
▢ 1.5 tablespoon minced garlic
▢ 1-2 tablespoons brown sugar depending on preference
▢ 1 tablespoon tahini
▢ 1 tablespoon olive oil
▢ 1 tablespoon rice vinegar
▢ 2 teaspoons fresh grated ginger
▢ 1 tablespoon sriracha (keep out for drizzle at the end!)
▢ 1 tablespoon sesame seeds
▢ 1 package shredded cabbage
▢ 1 cup shredded carrot
▢ 1 red bell pepper sliced
▢ ½ cup edamame
▢ ½ cup chopped cilantro
▢ ¼ cup chopped peanuts
▢ Primal Cilantro Lime dressing
▢ 1 pack vermicelli noodles

1. Whisk items 2-8 to make marinade for the shrimp
2. Add shrimp and let marinate in the fridge at least 30 minutes
3. Heat skillet with dash of olive oil on medium then add shrimp
4. Cook through then remove from heat
5. Cook edamame according to package then let cool
6. Boil water and cook vermicelli noodles according to directions on package
7. Mix cabbage and shredded carrots with Primal’s Cilantro Lime dressing to taste
8. Strain and let noodles cool
9. Assemble your bowl: vermicelli noodles, 2 dashes of soy sauce, slaw, bell pepper, edamame, sesame seeds, avocado, and crushed peanuts (I just add mine to sandwich baggie and use rolling pin!)

Drizzle with Sriracha & Enjoy! 💥

The TV will be setup across from my walking pad for a nice distraction and to hopefully keep me walking longer 🙏🏼🙌🏼

Ordered this desk to go with my walking pad - will be nice to rest my phone, keep water and the walking pad remote on while I’m working out.

This walking pad has been amazing “so far so good!” Love that it has a remote to help slow down or speed up during my walks. It shows time, distance, calories and speed all on a digital screen. It’s super quiet as far as treadmills go and honestly the speed catches up to me, it’s got some serious gas to it!

When it’s kicking my ass and my sweat is pouring - I love these microfiber sweat towels. They’re also great for amusement parks or any outdoor recreation as you can dunk them in ice water then wring out for a refreshing and cooling towel.

These little weighted bars might seem silly but they really help with squats, dead lifts etc. Super padded handles and come in several weight sets!

Amusement Park MUST HAVES 🎢🎡

A versatile crossbody that works FOR you is the crucial first step. I have & LOVE this crossbody. It has 2 main exterior pockets and 1 hidden “chest side” pocket for valuables.
There are built in card slots, mesh zipper pockets and stretchy deep pockets to help make organizing a breeze.

The VIRAL Cesar Salad Chicken Pizza 🥬

Ok we finally tried it and wow - pleasantly surprised!! Zero carb + high protein + super delish!

As always - all grocery items from HEB, everything else linked with recipe below:

Pizza crust:
- 20 oz. canned chicken drained
- 1 large egg
- 2/3 cup provolone cheese
- 1 TSP garlic powder
- 1/2 TSP crushed red pepper flakes
- 2 TBS minced garlic

Salad:
- Romaine lettuce chopped
- your favorite Cesar dressing (I like a LOT of Cesar dressing to make sure each piece is coated)
- fresh grated Parmesan cheese

Instructions:
- Preheat your oven to 400 degrees and line a baking sheet with parchment paper. In a blender/food processor or large mixing bowl, add canned chicken. If in a bowl, mash the chicken into little bits so it’s no longer in chunks. Add in the egg, cheese, garlic powder, minced garlic, crushed red pepper flakes and mix together until well combined.
- Pour chicken mixture on the lined baking sheet. Using your hands or a silicone spatula, flatten the mixture and form a circle. Make sure to trace around the edge when flattened to prevent thin, burnt ends.
Ours made about a 10-inch "pizza".
- Bake in the oven for 40 to 45 minutes, or until crispy and golden brown. When finished remove from the oven and allow to cool.
- Spread about 2 TBS Cesar dressing onto the crust then cut into slices. I find it easier to cut before adding all the lettuce on top! 😉
- Top your pizza crust with salad and finish with your fresh Parmesan! Add a few more red paper flakes if you desire or sprinkle on some croutons if you love a good crunch.

Creamy Tuscan Beef Pasta 🥩🇮🇹

This recipe was FABULOUS and so easy to make - would be perfect to serve a large group since it’s just 1 pot. Great for any party or even if you’re hosting a Mother’s Day dinner instead of brunch.

Recipe inspo createaplatewithdina with some modifications I prefer below:

Serves 6-8
770 calories per serving of 6
578 calories per serving of 8

12-16 oz preferred noodle
1 lb ground grass fed / finished beef
1 medium onion diced
2oz minced garlic
2.5 cups spinach, packed
1/3 cup sun dried tomatoes in oil, julienne
1 TBS oil from sun dried tomatoes
2 TBS tomato paste
2 TBS kerrygold butter
2 cups grass fed milk
2 cups beef bone broth
3oz fresh shredded Parmesan
2 TSP garlic powder
2 TSP onion powder
2 TSP Italian seasoning
1 TSP paprika
1/2 TSP salt and pepper blend
1.5 TSP Redmond’s salt

1. In a large pot add ground beef, 1 TSP garlic powder, 1 TSP onion powder, 1 TSP paprika, 1 TSP Italian seasoning, 1 TSP salt and pepper blend. Cook over medium to high heat for 5 minutes making sure to break it up into super tiny meatball size pieces.
2. Add in onion, minced garlic, butter, sun dried tomatoes, oil from sun dried tomatoes and tomato paste. Sauté until meat is browned.
3. Add in pasta, beef bone broth, milk, 1 TSP garlic powder, 1 TSP onion powder, 1 TSP Italian seasoning, 1.5 TSP Redmond’s salt. Mix until incorporated and create an even layer of pasta.
4. Bring to simmer then cover with lid and cook for 10-12 minutes on medium-low heat or until noodles are desired softness.
5. Turn off the heat and pour in the spinach stirring until it wilts. Sprinkle fresh Parmesan cheese and stir until melted. Now it’s ready to plate!

I added a little extra parm on top and a dash of parsley for color 🇮🇹

This was PHENOMENAL - truly 10/10 Outstanding and has officially earned its spot in our “family cookbook”.

A simple ONE POT MEAL cooked on the table in under 30 minutes. 😘

Really love playing with textures by adding in these unexpected “realistic” tributes to Mother Nature herself!

Any time I see vegetable or fruit plates, pitchers, you name it - always reminds me of my sweet grandmother.
She was the hostess with the mostess and one hell of a cook! Her kitchen was full of pitchers and plates like these and it just adds a flare of nostalgia while feeling so current at the same time.

My amazing mother also has a collection of pitchers around her kitchen with vegetable motifs. It’s just so whimsical and classic - and now has found its way to truly on trend.

Absolutely love these cocktail napkins and napkin holders. Just enough punchy color while being small enough not to dominate any tablescape.

These candle sticks though have my heart! I think the detail and color is fantastic. I ordered 2 of each to stagger across my dining room table. Would also be fun on your counter top mixed into a grazing / charcuterie set up.

Tropical Salmon Bowls 🌴🥭🐠🥑

Now imagine you’re me trying to use it 🤣😅
2 - these were delish! THANK YOU @gracie_norton for the dish inspo! Her exact recipe wasn’t listed so I just made note of ingredients I saw her use then added my little twist!

Amazing thing about this - there’s 0 dressing so saving on useless calories and it was SUPER filling!

For the salmon -
Dijon, honey & brown sugar rub
Airfry on 350 for 10 minutes
Pulling out every 3 minutes to toss around - on the first time you pull it out, sprinkle your desired amount of Cajun seasoning.. I have a generous hand 😉

For the bowls -
Super simple with some long grain rice, cabbage, Persian cucumbers, generous scoops of @heb INSANE mango pico it’s delish! I love the mini peppers and cut up a red and orange to “marinate” with some banana peppers and their juices from the best @mezzetta
Adding avocado if you desire, sprinkling cilantro and drizzling with siracha and @roundrockhoney on top!
Before I serve I always add an extra dash of @slapyamama 🙌🏼

Brainstorming final touches for Mario’s office. Love the rich hues of leather, terracotta and mid century wood stains. Light marble is so feminine to me so by contrast dark marble feels super luxe and masculine.

$Coral Crush 🪸 Ok yesterdays “heatwave” collection really sparked my love for coral! How fun are these pants - you could wear a ton of ways.. to work with a crisp white button down tucked in, casually with a fun graphic tee or as shown here with a little cinched top for date night! These butterfly earrings stole my heart and come on, this “howdy” necklace was an *add to cart* immediately! Too perfect for any Texas gal or Tennessee lady 🧡 Lastly - love the look of these braided sandals. They look designer (think YSL) but for a fraction of the price which is PERFECT for these to be a “throw and go” pair. Or as Mario calls them, “a burner pair” lol Toss on your favorite sunnies for the sunset car ride then slide them up for the perfect “headband” when the sun goes down.
