A simple strawberry pie 🍓🥧
Ingredients:
* 1 baked 9-inch pie shell (2 1/4 cups of flour, 1 tsp salt, 2 sticks cold butter-cubed, ~8-10 tbsp cold water)
* 1 quart fresh Louisiana strawberries (2 cups smashed & 2 cups sliced)
* 1 cup white sugar
* 3 tablespoons cornstarch
Directions:
1. Mash ~2 cups strawberries berries and combine them with the sugar in a medium saucepan.
2. Place saucepan over medium heat and bring to a boil, stirring frequently.
3. Next, add the cornstarch and the water in a small bowl and whisk/stir until. Gradually stir the cornstarch mixture into boiling strawberry mixture.
4. Reduce heat and simmer until thick, about 10 minutes, and stirring occasionally.
5.Place ~2 cups of sliced strawberries in baked pie shell.
6. Pour the strawberry mixture over the strawberries in the pie shell.
7. Chill the strawberry pie for at least 2 hours.
8. Cut and serve!
9. Add some whipped topping if you want!
