I found this recipe a little over a month ago and have already made it twice for our family!! I eat it with cauliflower rice (sometimes I use plain cauliflower rice and other items I spice it up with the Thai mix seen here) and Marcus and the kids get jasmine and/or wild rice! Mix it all together for a delicious and satisfying meal. *I usually give the kids a veggie (like broccoli) with this for a well-balanced dinner!! We get 2 dinners from this recipe!
Crockpot honey teriyaki chicken!
Ingredients:
4 chicken breasts
½ cup soy sauce
½ cup honey
¼ cup rice wine vinegar
½ onion, chopped
1 TB minced garlic
1 TB minced ginger
3 tablespoons corn starch
¼ cup water
pepper, to taste
Sesame seeds, if desired
Directions:
1. Mix the soy sauce, honey, rice wine vinegar, onion, garlic, pepper and ginger together in a small bowl and set aside.
2. Oil the slow cooker and add the chicken breasts.
3. Pour the sauce over the chicken, cover and cook on high for 3 1/2 hours.
4. Remove the chicken and set aside in a large bowl.
5. Transfer the sauce into a saucepan.
6. In a bowl mix together water and corn starch and pour into saucepan. Reduce over a medium heat until thick.
7. Shred the chicken thoroughly with two forks or a chicken shredder.
8. Add the chicken to the sauce and mix thoroughly.
9. Serve over a bed of rice or cauliflower rice for a healthy option. Add sesame seeds, if desired.
