The whole family is loving these kid-approved pepperoni pizza meatballs!! I slightly adapted the recipe from @fedandfit to make it gluten free. I also doubled the batch and made almost 100 meatballs!! I’ll freeze half of them for us to eat another week. Here’s the recipe for one batch of meatballs:
Ingredients
1 pound ground beef
1 pound ground Italian sausage
1 cup diced pepperoni
½ cup parmesan cheese (I used grated but you can also use shredded)
½ cup panko (or bread crumbs)
1 egg
2 tablespoons Italian seasoning
2 teaspoons sea salt
½ teaspoon ground black pepper
3 mozzarella cheese sticks cut into ½-inch pieces
12 ounces pizza sauce warmed, optional
¼ cup fresh basil, optional
Red pepper flakes, optional
Directions
Add the ground beef, Italian sausage, diced pepperoni, parmesan, panko, egg, Italian seasoning, salt, and pepper to a large bowl and use your hands to mix the ingredients together until fully combined.
Use a scoop to scoop the meatball mixture, and place on a sheet pan (I lined mine with aluminum foil and sprayed it with nonstick cooking spray first)
Place a ½-inch piece of mozzarella cheese in the center of each meatball and roll the meatball, making sure that the cheese stays in the center.
Bake the meatballs at 400°F for 22-25 minutes, or until browned.
Serve with warm pizza sauce for dipping, and garnish with red pepper flakes and basil.
You can also customize these with diced onions, bell pepper, olives, or really any pizza topping!
